After creating Dave's Monogomy Bock (Weizen-Bock), we decided to use the yeast, hops, and other goodies at the bottom of the fermenter to start up a summer cider.
In doing this, some of the bitterness from hops used in Monogamy Bock, and highly viable German strong-wheat ale yeast wound up in the mix, and created an amazingly smooth, firm and complex drinker.
The cider element consisted of 5 gallons of unfiltered organic (save the world, bro) apple juice, oat (steeped for 30 minutes at 160* with the juice), and some oak chips.
Since Dave isn't going to ever get married again, we can't use dregs from his beer to make this a second time, but we're itching to give it a go once more.
