I Drank With Vikings
This is going to be a bad ass brew. Chris had a dream about sitting down at a camp fire with some crazy Norse-men drinking a strong, dark, honeyish, blueberryish, chocolateyish hulk of a beer so we're trying to re-create it. So far we have a 10% base beer that is a Belgian strong dark ale with emphasis on 120L grain which gives it a deep, rich color, along with some chocolate malt, and its all going to be blended with a blueberry maple mead. Thats right, a beer-mead with blueberry mixed into it. But hold onto your face, it gets even more interesting, its probably going to be aged on some oak as well, but we'll see about that. This one will be a test of time, so bear with the results. Just tasted the base beer today and its still a little high octane still, its young, and its still at 1.028 gravity. We're figuring that the Montrachet/Champagne yeasts we used in the mead will eat up all of the residuals, but aging never hurt anyone.
Another update: The old ale-turned-sour is tasting great. Its drying out a little bit but the pellicle hasn't dropped yet, so we have a while on that mother, yet.

Apple Wine...made a batch almost three years ago and its tasting AWESOME...too bad we're almost out of bottles, so we need to get crackin on that again. SPEAKING OF WHICH;

As with What's Kraken? comes batch 2 of our dark sour second-running stout! Need a name for it, but the last one was aged with oak chips, and concord grapes that had been soaking in Bourbon.
LOTS OF NEW TRASH:
Bought a 15 gallon stainless steel mash tun from the Bruery's Provision store, a 5 liter conical flask, stir plate, and other goodness.
We've come up with an executive summery rough draft for the brewery start up, as well as a mission statement, and other things of interest. What does everyone think of "Barbarian Brewhouse- Valhalla's Liaison?"
I think its tight.
